It seems only fitting to post a dessert recipe on Christine's Birthday, especially one covered in sprinkles. I had made this cookie recipe before, but leave it to Christine to come up with the brilliant idea to turn them into ice cream sandwiches rolled in sprinkles! The perfect dessert for a birthday celebration (or on a random Tuesday just because you deserve it)!
Step 1: Gather your ingredients.
- 1 package Pillsbury™ Funfetti® Premium Cake Mix
- 1/3 cup vegetable oil
- 2 large eggs
- 1/2 can Pillsbury™ Funfetti® Vanilla Flavored Frosting (optional)
- Vanilla frozen yogurt
Step 2: Preheat oven to 375 F
Step 3: Mix the first three ingredients in a large bowl. I highly suggest folding 1/2 can of frosting into the mixture for a gooey cookie, but you don't have to do this step.
Step 4: Form dough into 1-inch balls and place on an ungreased cookie sheet.
Step 5: Bake 6-8 minutes. (The edges might start to look a little brown but they won't look super cooked through because of the frosting.)
At this point you have options. You can stop here and eat the cookies plain. You can use the rest of the frosting to frost the cookies and add sprinkles! Or you can finish the ice cream sandwich recipe (which is so worth it).
Step 6: Spread frozen yogurt between 2 cookies. (You can also use any ice cream flavor, we just felt like the frozen yogurt is easier to spread.
Step 7: Roll the cookie sandwich through sprinkles.
Step 8: Enjoy!
